RECIPE / Chocolate Fridge Cake


Today I've got another little DIY treat for you! 
This is my first Recipe post so I'm excited to see how it goes. 

Chocolate Fridge Cake is a delicious, super easy flapjack-style biscuit that requires no oven to make! It doesn't take long to make - around 10-15 minutes, and is the perfect snack. All my friends and family love it! 

What You Will Need:
Ingredients: 7oz butter (almost a whole block of butter - not margarine), 600g biscuits (around two packets), 300g Golden Syrup & tablespoon of cocoa powder. 
Utensils: big mixing bowl, a smaller bowl, saucepan, a mortar (optional - helps with crushing biscuits!), a baking tray, wooden spoon & a palette knife (optional again).


The recommended biscuits are McVities' Digestives; unfortunately they didn't have any in my local shop this time so I had to settle with Hobnobs. They still work fine, but I would definitely recommend Digestives over Hobnobs due to the texture and taste.

Also have half a pack of Rich Tea's handy as it's even yummier with two types of biscuit in the fridge cake, so add some of those in too. 

Ready? Let's go! 


Step 1: 
First of all, break up 9 biscuits into a small bowl and keep these separate from the bigger mixing bowl. Don't break the chunks up too small - it's nice to have a few big bits of biscuit in the fridge cake. As you can see here I've added the Hobnobs and Rich Tea's.

Step 2:



Add the rest of your biscuits to a big mixing bowl. You can either use a mortar (which I find easier) or your bare hands to crush the biscuits up into tiny bits so that you are left with what looks like a big bowl of crumbs. 

Step 3:


Put your butter in the saucepan and melt on a low heat setting (usually 1) on a cooker hob. 

Step 4:


Once the butter has completely melted, add the tablespoon of cocoa powder and mix in until there are no lumps in the cocoa and the texture is smooth. 

Step 5:


Next, add the 300g Golden Syrup to your cocoa powder and butter mix. Mix in until the Golden Syrup is evenly spread throughout the mixture. 

Step 6:


Add your little bowl of big biscuit pieces to the saucepan. Mix in until they are covered in the chocolatey mixture. 

Step 7:





Next, add the big bowl of crushed biscuits. I would recommend adding half of the crushed biscuits to the mixture and mixing those in before adding the rest, as it's easier to cover the biscuits with the cocoa mixture in two doses.


 Step 8:




Finally, pour your mixture into a baking tray and then smooth and flatten with palette knife (optional - kneading it works pretty well too). 
Pop it into the fridge for 2 hours to set. 

Once you take the fridge cake out of the fridge, cut it into bars, cubes or brownie-style chunks. Then go and pour a cup of tea and enjoy the biscuity deliciousness of my Chocolate Fridge Cake!
